Kohlrabi: One of the Most Amazing Vegetables You’ve Never Heard Of
What is it?
Kohlrabi (pronounced kohl-rah-be), also called a German turnip, is part of the brassica (cruciferous vegetable) family which includes cabbage, broccoli, cauliflower, kale, Brussels sprouts, collard greens, and Savoy cabbage. It has a white, green or purple bulb, white center and has leaves sprouting up from the top, which are edible as well and great in salads.
Kohlrabi is one of the few vegetables that is equally appealing raw or cooked. When raw, it tastes like a milder version of broccoli. When cooked, its sweetness really comes out, with hints of apple or jicama. Because of this versatility, it has become a prevalent ingredient in many of our products here at Mann’s.
Vegetables have moved from the side to center of the plate over the last few years, and rightly so because of their plethora of nutritional benefits. Kohlrabi is no slouch in that department, with 62 mg of Vitamin C per 85 g serving. Compare that to one small (85 g) orange, which offers up 53 mg. Plus it’s low in calories and fat (source: USDA).
How to cook with it?
The options are endless when it comes to this versatile and recipe-friendly veggie. You can slice kohlrabi into sticks and eat raw, like jicama, with your favorite dip. Spiralize and use it as a substitute for pasta. Or slice it into steak-like cuts and grill for a Meatless Monday “burger” option or use raw in salads and slaws.
